Breakfast Slop

I’m just stopping in to share a quick recipe with the class. I woke up this morning in kind of a bad mood, and wanted some comfort food. The boyfriend left for work early, so I was only cooking for myself.

Basically I spent 10 minutes pulling things out of the refrigerator, trying to combine them into something that would fit in one skillet and raise my cholesterol as well as my spirits. Here’s what I ended up with (no measurements as usual). This meal is unlikely to help with any weight loss plans you might have, obviously.

2 eggs
1 plum tomato
little bit of swiss, cheddar and smoked gouda cheeses
handful of diced ham
about 1/2 of each: onion, red bell pepper, jalapeno
3 or 4 roasted potato wedges – chopped

Throw everything except egg and cheese in a skillet with some butter -brown and heat through. Whisk together eggs with a little milk – season with salt and pepper. Turn heat down on skillet and fold in eggs. As eggs begin to set, sprinkle cheese on top. Serve when cheese is melted.

Yummy gooey delicious.
