What’s not to love?

Trying to get out of my bad mood, escape holiday stress and forget the assorted craziness lately, I went to back-to-back yoga classes yesterday. I only go occasionally because it’s expensive and a little too crunchy for me, but I needed someone to make me actually lead me. And thank goodness. Because not only did I feel 150% better, I came home to a great surprise. The world’s most fantastic boyfriend (happy?) baked me a cake. And was adorably embarrassed about it. It’s a little lopsided, but lovely. It’s a lemon cake with raspberry filling and “some white kind – vanilla or just white”  icing.

First, I was impressed that he went to buy all the stuff, baked the thing, and iced it while I was gone. That’s a lot of work, even from a box. Of course, I love that he tried to recreate a personal favorite. And, I really appreciate the over-the-top, completely unnecessary step of making it four layers. The thing weighs a tons. But, as you can see, it looks good, and tasted even better. I have no idea what we’re going to do with it, a cake this size would take me months to eat, but I love it very much.

Funk ended, insulin shock beginning.
